How to Cook Quinoa
1 - Thoroughly rinse uncooked quinoa using a mesh strainer
2 - Add Quinoa and Water to pot, cover
3 - Bring to Boil, then reduce heat to bring it down to a simmer; cover for 15–20 minutes. Do not lift cover
4 - Remove from heat and fluff with fork
Saute Vegetables
1 - Saute Chopped Garlic and Olive Oil on medium heat in pan
2 - Add Green and Red Peppers and cook for 5 mins
3 - Add Mushrooms and cook until softened
4 - Add Chick Peas and toss until warmed over
5 - Add Salt and Pepper to taste
6 - Combine Quinoa and Sauted Vegetables and toss in Cherry Tomatos
7 - Add Quinoa Vegetable mixture to Mason Jars (Yields 4 Jars)
Eat Warm or Refrigerate for a grab and go meal on the run
